We all know the inherent value of organic, unprocessed foods. But there’s nothing that brings us quite as close to nature as personally foraging for nature’s Springtime bounty.

At Esperienza, we’re passionate about this special seasonal event. And we love learning how our friends in Romagna make the most of it. From the young nettles and asparagus to the watercress and fiddlehead ferns, these ephemeral culinary treasures fill plates and palates across the region. (Not to mention the wild mushrooms!)

Please join us as chef Matteo Cameli, a master forager and truffle hunter, leads us - live online and in real time - into the forest outside his home in the mountain village of Portico di Romagna.* Matteo will first show us how to hunt for Spring’s best treasure. Then he will bring us back to his kitchen where he’ll teach us how to prepare a feast of authentic Italian dishes from his prized gatherings, letting us in on some time-honored secrets of bringing out the unique flavors in salads, risotto and tagliolini. Along the way, we’ll share recipes, stories, and laughs (in English!) with our charismatic host.

For centuries, our ancestors foraged as a means of survival and as a vital source of vitamins and minerals after the long winter. Unfortunately, this source of nourishment nearly disappeared due to urbanization and pollution. Now, we're happily seeing the renaissance of foraging, and some of the most creative chefs, such as Rene Redzepi and Massimo Bottura, are bringing our attention back to the gifts of the forest. And our lives are all the richer for it.
