ABOUT THE PROGRAM:

This trip features iconic ingredients of the region, including favorites like Prosciutto di Parma, and Parmigiano Reggiano, and also some lesser known treasures like the "sweet salt" of Cervia. We'll go to the source to learn about traditional production methods, still being practiced with care and passion. Like our original culinary tour, we'll enjoy farm-to-table meals at quaint agriturismos, as well as Michelin-starred dining, as well as cooking lessons. We'll also sample a variety of regional wines, from Albana to Lambrusco.

The culinary artistry of Emilia-Romagna is best complemented by experiencing its artistic heritage, so we will include a visit to Ravenna, home to countless glittering mosaics and eight UNESCO World Heritage sites, and Faenza, the heart of Italian ceramics.

Our small group and slower pace will allow us to relish each moment, learn the hidden stories behind the creation of iconic dishes, and appreciate the intersection of food and culture in Emilia-Romagna, with discoveries around every corner, and food that has never tasted so good. Buon appetito!

Experience a week of culinary discovery in Emilia-Romagna, and a deep dive into the ingredients that define Italian cuisine, such as:

Influenced by Slow Food Italy and other similar organizations, we’ll experience and appreciate each ingredient through extraordinary meals, wine tastings, cooking lessons, behind-the-scenes demonstrations by award-winning chefs, visits to farms and interaction with producers using the traditional methods. We’ll learn about the preservation and use of indigenous varieties of fruit (including grapes), and their conribution to local cultures and gastronomies. We’ll meet with farmers, agronomists, foragers, cheese makers, artists, artisans, bakers, vintners, and chefs, all of whom are inspired by the beauty of the countryside and the bounty it produces, and will impress us with their craftsmanship, creativity, and passion.

Anna Bonavita. The founder of Esperienza has a life-long passion for food, excellence and in-depth history exploration. Since 2000 she has been visiting or living in Romagna and would be delighted to share her love for La Terra del Buon Vivere (The Land of Good Life, as Romagna is called).
